Kelompok riset ini menyelenggarakan riset proses pangan sumber protein alternatif, untuk memenuhi kecukupan gizi masyarakat dengan memanfaatkan komoditas lokal. Ruang lingkup kegiatan riset dikelompok, sebagai berikut: (1) Eksplorasi pangan lokal sumber protein alternatif; (2) Identifikasi dan karakterisasi senyawa fungsional pada pangan lokal sumber protein alternatif; (3) Rekayasa teknologi proses pangan lokal sumber protein alternatif; (4) Formulasi, optimasi dan nutrifikasi proses pembuatan produk berbasis protein alternatif (plant/insect-based product); (5) Pengujian mutu dan daya simpan produk; (6) Pengujian fungsionalitas produk secara in vitro dan in vivo (pra-klinis)
